We are running a z2jh installation with the users from our LDAP and /home and /scratch available. For regular Linux env we use automount to make available around 300 NFS shares, but in the container env this is not doable. Would you suggest me something else than creating a PV and PVC for each and every share ?

You can just make one PV / PVC, and use subPath to mount one per user. User home directory storage — 2i2c Pilot Hubs Infrastructure documentation has some documentation about the setup we use, written by @GeorgianaElena. I hope that is useful to you.
