Thanks to @kafonek for suggesting the fix to my docker-compose question – see https://github.com/phaustin/jupyterhub_basics/issues/1#issuecomment-682110674 for his answer (i.e. – I needed to explicitly name the network to match the name I passed to dockerspawner)
